Just have to brag about my mom’s food preservation so far this year. She just sent me this photo. Damn. Her pickles are worth about $1 million per jar. That is just an estimate.

Have you or your mother ever made pickled watermelon rind? They are sweet, rather than sour. My grandmother used to make them every summer. (I made them 3 years ago.)
PS: My kids are 10, 8, 6, 5, 2 and 11 months

How long did it take her to do all of that?
I did the dilly onion pickles mid July and finished up with the dilly beans on August 27th. I ordered 30 lbs. of tomatoes to make the salsa and just picked them up August 18th. I have had pickled watermelon rind…it is good!
